    some of the examples and their listings do not take into account the creaming nor the proper percentage ratios to changes in ingredient weights and measures

    also, just the temperature or humidity levels can drastically alter cookie spread 🙂

    I have not yet seen, nor did I when in culinary school, a difference in spread with the granulated and brown sugar substitutions, I did learn how NOT to get that lace cookie type spread that comes from the sugar ratio 🙂
